Hard candy began in ancient India, where it was discovered that sugarcane juice could be boiled down into solid pieces that were called khanda, the origin of the word “candy.” Sugar grew in popularity, and by the 1500’s the candy industry was born. In 1670, legend has it that a choirmaster in Germany handed out sugar sticks shaped as shepherd’s crooks to his young singers, to keep them quiet during the Christmas service; and candy canes were invented.
